Memere’s Easy Homemade Italian sandwiches

You are going to love Memere’s easy homemade Italian sandwiches. They are so easy and simple to make with few ingredients. It’s not like your typical Italian sandwich but once you get the flavors together you are going to enjoy. They are perfect for on the go or an easy summertime dinner where you don’t have to spend hours cooking in a hot kitchen.

Growing up my grandmother (memere) always made these easy homemade Italian sandwiches. They were one of her biggest hits. The family would practically fight over them when she made them. These were popular in the summertime since they were so easy and simple to make during those hot days. Although she is no longer with us today, I remember making these with her often. Looking back, I would have never thought a silly sandwich would make me miss her so much. I cherish all the memories and I’m happy to share this recipe with all of you.

There is only one change from her recipe that I changed which is the cheese selection. She used yellow American deli cheese. I switched it to sliced cheddar, honestly, I don’t taste a difference. Since I’ve gotten into making bread. This time I made these sandwiches I made my own grinder rolls which was amazing. But to keep this simple store-bought grinder rolls work just fine too.

Ingredients

  • Pack of soft grinder rolls
  • 1 lb sliced ham deli meat
  • 1 lb sliced cheddar cheese
  • 1 large tomato
  • 1 green bell pepper
  • 1 sweet onion
  • Jar of dill pickles
  • Olive oil
  • Cayenne pepper

How to assemble your Italian grinder

First

Start by cutting up your vegetables (tomato, green bell pepper, onion and pickles) you can either cut them into thin strips or dice them up as I did.

Next

You are going to want to cut your grinder rolls the long way. Make sure not to cut all the way through the bread just enough to make yourself a pocket.

Evenly drizzle olive oil on the insides of the bread, then sprinkle cayenne pepper on top. You can add as much or as little cayenne as you want on these, I know everyone like for spice can differ.

Finally add cheese, ham and toppings (onions, peppers, tomatoes, and pickles).

How to store these grinders

Depending on how many grinders you make at once, you can easily store them premade in the fridge for about a week. Wrap them tightly in plastic wrap.

Ingredients

  • 6 pack grinder rolls
  • 1 1/2 lbs Sliced Ham deli meat
  • 1 1/2 lbs Sliced cheddar cheese
  • 1 large Tomato
  • 1 Green pepper
  • 1 jar Dill pickles
  • olive oil
  • cayenne pepper

Instructions

  • First chop up all toppings (tomatoes, onions, green bell peppers, and pickles)
    2. Cut open grinder rolls
    3. Drizzle olive oil on each side of the opened grinder roll then sprinkle cayenne pepper
    4. Next add sliced cheese and ham to each grinder
    5. Finally add all the toppings to the grinder
